I decided to go with a balsamic theme for the meal. We had a salad of baby greens and herbs with a balsamic vinaigrette, grilled salmon fillets, grilled balsamic-marinated broccolini, and couscous mixed with a little feta. All of that was topped with a honey-dijon balsamic sauce.
I also cut some of my blooming azaleas and some yellow-flowered groundcover and made a nice bouquet. After dinner, Craig’s mom, Sue, and her best friend, Jen came over for some peach cobbler. It was a very nice night. 🙂
